Our Max loves the moon, and the moon loves Max. He told me all about the moon when he was here, the waxing crescent is his favorite but it's hard to beat a waning gibbous, as he said, "Gramma, more than half the face of the moon is visible so that's pretty cool!" Max is definitely a Moon Man and he is super excited about the eclipse that's coming in a few days. I wanted to do something special for Max, you know, to help build the excitement and all that...I figured sugar cookies topped with buttercream and a thin chocolate wafer would definitely help!
These come together pretty fast, since you're not decorating the sugar cookies, just "gluing" on the chocolate wafer but if you want to save some time, you could purchase refrigerated sugar cookie dough at the store, and a container of pre-made frosting (I won't judge...unless you tell me) and then you'll need a package of Famous Chocolate Wafers...probably should buy two packages because they break super easy! IF, however, you want really yummy cookies, then use my recipe here.
You can see in the above picture that the wafers are not perfectly round...not to worry, those little edges break off easily and then you'll have a perfect dark moon to go over your sun/cookie. The wafers measure about 2 1/4-inches. For best results use a 2-inch cookie cutter (your cookies will be about 2 1/2-inches after baking) because you only want a thin edge of cookie protruding past the wafer...or if you want more, that's okay, you decide. (I made several different size cookies and ended up liking the results the 2-inch cookie cutter gave - the others were just too big after baking!) Whip up a batch of my buttercream frosting (use the link above and scroll down) and then glue the wafers to the sugar cookie with the frosting. That's it. Genius, no?
You can see that I was only able to use about half of the wafers, they looked great in the package but when opened half of them were already broken.
Once your cookies are baked and cooled, make the frosting and spread it onto the backs of the chocolate wafers. Press wafers down lightly onto the sugar cookies and now you're got yourself some pretty cool Eclipse Cookies!
Eclipse Cookies - Pots and Pins
1 recipe sugar cookies, click here (or you can use store bought sugar cookie dough)
1to 2 boxes Famous Chocolate Wafers (or you could use Oreo Cookies, just cut the sugar cookies a bit smaller)
1 recipe buttercream, click here (or you can use store bought frosting)
Follow directions for making cookies and cut out circles using a 2-inch round cookie cutter.
Follow direction for baking cookies. Allow cookies to cool. Meanwhile make buttercream frosting, following directions. Apply a good dollop of frosting to the back of the chocolate wafers, "glue" onto the cooled sugar cookies.
Makes approximately 44 Eclipse Cookies. Remember to have fun but don't look at the SUN!
