When the Seattle Seahawks (we have to cheer for our hometown team!) blew past the Giants to win, in Giants stadium, we were munching on these. When the Washington Redskins (the mister's team, he lives and breathes Redskins' football) killed the Rams, 17 to 10, we were also munching on these...and when the Kansas City Chiefs (my family's team...they're all Chiefs Freaks, and I mean that in the nicest way!) mowed over the Colts, guess what we were snacking on? You got it - Garlic Chicken Cheese Bites - the perfect football food...whether you're tailgating in the parking lot or on the sofa!
You can make these the easy way, with a rotisserie chicken from the store, or you can cook and shred your own chicken. The chicken is combined with cream cheese (!) and cheddar cheese, onions and Cholula Garlic Sauce, which gives them a great garlic flavor with just a bit of heat.
Dredged in flour, dipped in egg, rolled in Corn Flakes...my-oh-my! And then they are baked! Crispy, creamy and zippy...YOUR team cannot lose if you are eating these babies on game day!
Garlic Chicken Cheese Bites - Adapted from Bid Daddy's House, Food Network and Pennies On A Platter
3 cups shredded cooked chicken
3 tablespoons Cholula Garlic Sauce (or any other flavored Cholula Sauce)
4 oz. cream cheese, softened
1 1/2 cups, packed, sharp cheddar cheese
1/4 cup finely diced green onions
1 cup flour
4 eggs, lightly beaten
3 to 4 cups Corn Flakes, crushed
Preheat oven to 350 degrees. Line a large baking sheet with parchment paper. In a large bowl, mix the chicken, cream cheese and hot sauce until combined. Stir in the cheddar cheese and green onions.
Using a small cookie or ice cream scoop, spoon out the chicken mixture and roll into about 1 1/2 inch balls. Place on a plate or separate baking sheet (not lined) until ready to dip.
In three separate bowls, set out the flour, eggs and Corn Flakes. Dip each chicken ball first into the flour, then the egg and ending with the Corn Flakes. Place on the prepared baking sheet and bake for 20 to 25 minutes, or until crispy and golden brown. Serve warm with Buffalo sauce, ranch or blue cheese dressing or more Cholula Garlic Sauce. Makes about 24.
To make these and freeze for a later time, follow the recipe until all of the chicken bites have been dipped and rolled in corn flakes, then placed on a parchment lined baking sheet and flash freeze for 20 minutes. Transfer to a freezer bag and keep in freezer until ready to use. To bake, place frozen chicken bites on parchment lined baking sheet and bake at 350 degrees for 25 to 30 minutes, or until crispy and golden brown.
