Today I'm going to give you a little bit of alright...Monday through Friday it's dog eat dog...Saturday is full of errands, lawn mowing, weed pulling, bill paying, Boston Legal reruns...and then comes Sunday and Sunday morning brunch. It's what makes Monday through Saturday possible.
Hollowed out fresh tomatoes are filled with an egg and corn mixture, topped with cheese and baked until the angels sing...Glory, Glory Hallelujah let those Saints Come Marching Home! Now, this does take a bit of time to bake, it takes the same amount of time as it does for me to read the Sunday paper and half of the ads...so plan 45 minutes of serious down time - and no cheating, as in no tossing in a load of wash, no sweeping up spilled cereal from the night before when someone raided the kitchen at midnight, no washing away fingerprints on top of the pantry door from that same FREAK! SOMEONE!
The mister hailed these as "EXCELLENT!" But then, because he just couldn't help himself, he said, "Wouldn't these be better with grits inside?" No, no they wouldn't because they're TOMATOES AND EGGS NOT TOMATOES AND GRITS. Make these...make these and eat them on Sunday morning...put the Sun in your day...it just might make everything else tolerable.
Baked Eggs in Tomatoes - Adapted From Everyday Food July/August 2010
3 large beefsteak tomatoes
coarse salt and ground black pepper
1/3 cup fresh or frozen corn kernels
3 large eggs
1/2 teaspoon snipped fresh chives
1 teaspoon green onion, finely diced
1/4 cup shredded/grated cheese, Swiss, Parmesan, Pecorino - whatever you like
Preheat oven to 350 degrees. Line a 9-inch baking dish or pie plate with parchment. With a serrated knife, cut off the top 1/2-inch from each tomato. With a grapefruit spoon, gently remove seeds and inner membrane, being careful not to break through flesh of tomato. Place tomatoes in dish and season each with salt and pepper. In a medium bowl whisk together eggs, chives, green onion and season with salt and pepper. Stir in corn. Divide egg mixture among tomatoes and top with cheese. Bake until egg mixture is set, 45 to 50 minutes. Serve warm.
