I have a dream that one day everyone will eat these muffins...I have a dream that one day everyone will sing Kumbaya after eating these muffins...I have a dream that today, Martin Luther King, Jr's holiday, these Sweet Cream Corn Muffins will become the national food of choice.

These muffins could bring peace, calm and harmony to the world...everyone assume the lotus position please, pinkies and thumbs together now...hum quietly to yourself as you soak in these words...these are good...5 dangs worth of good! Now get yourself up and into the kitchen to make yourself a batch...world peace is waiting on you!
Oh, to be "Fox" with you, (fair and balanced) these muffins/butter are on NOBODY'S diet. They are neither fair nor balanced...you won't stand a chance of eating just one and unless I'm terribly mistaken, cream, sugar and butter will not balance your scales...but whatever, they're so worth it. Say, I just had a great idea! Since it IS a holiday (even if in name only) why not take the day off from dieting? I'm going to do it - and a cursory look out the window let me know the sun will shine in the Great Northwest today (a rare thing in January) so perhaps a trip over the bridge into the city is in order? Yes! Maybe if I hurry I'll make it in time for the MLK parade?!? Or not, my riot gear is still at the cleaners.
Sweet Cream Corn Muffins With Cinnamon Honey Butter - Pots and Pins
1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 cup yellow corn meal
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup milk
3/4 cup cream
2 large eggs
1/3 cup vegetable oil
3 tablespoons melted butter
Preheat oven to 350 degrees. Grease muffins tins (or use paper liners). Combine flour, sugar, corn meal, baking powder and salt in medium bowl and whisk together. Combine milk, cream, eggs, vegetable oil and butter in small bowl, mix well. Add milk mixture to flour mixture; stir just until blended. Pour into prepared muffin cups, filling 2/3's full. Bake for 18 to 20 minutes or until tops are lightly golden and center feels firm to the touch. Cool in pans for 5 minutes before removing to wire racks to cool slightly. Serve warm with Cinnamon Honey Butter. Makes about 15 muffins.
Cinnamon Honey Butter - Pots and Pins
1 stick butter, softened (can be slightly melted but do not melt completely)
1/4 teaspoon cinnamon
1/4 teaspoon vanilla
3 tablespoons honey
Mix all ingredients together until smooth. Put in refrigerator for 5 to 10 minutes. Remove and spread on muffins. Makes 1/2 cup.
