The mister just celebrated his birthday...whoop-dee-doo...he hates birthdays, his and everyone else's. It occurred to me that he could be a closet Jehovah's Witness as they don't celebrate birthdays, Christmas, etc., not that there's anything wrong with being a Jehovah's Witness...it's just that as his wife I think I should know these things. So I called the mister, to ask him point blank if he was a JW...and he said, "Well, I suppose I'm actually more of a Scienacologist." Yes. That's what he said. The mister is a cross between a Scientologist and a Gynecologist. He's also very adept at mangling his native tongue. I've warned him about using big words and words he doesn't know the meaning of, which when he listens to me and sticks to the words he knows, limits his vocabularly to about 50 words. Sheesh! You can take the man out of the cave but you can't take the caveman out in public...isn't that how the saying goes?
These delectable little desserts are sure to get you some raves...especially from your cranberry loving friends and family...did you know cranberries practically burst with goodness? And with a touch of orange zest they are a Vitaminologists dream! (I'm certain that's a word...although I'll not tempt the mister with it.)
There are 3 parts to this recipe...first you bake the Puff Pastry Shells, cool and remove the tops and centers - they are your vessels...now there's a word that should be used more often...vessel. Go ahead and try using it in a sentence right now...kind of fun! The second part is the cranberry cream filling which is whipped up in a jiffy. The third part is the cranberry topping, cooked on the stove top to perfection and you'll have a bit left over which would be perfect on your turkey sandwich Friday afternoon.
They're so pretty and would be great on the Thanksgiving table...for Christmas just stick a sprig of fresh mint on top and you'll have a dessert that just screams Christmas! 4 dangs my friends...count 'em...'cause they're dang, dang, dang, dang good.
Cranberry Cream Shells - Me
1 package Puff Pastry Shells
8 oz. cream cheese, softened
1/4 cup butter, softened
1 cup powdered sugar
1/3 cup Whole Cranberry Sauce (from a 15 oz. can)
1 cup cider
1 cup sugar
1/4 cup brandy, optional
1 cinnamon stick
zest from half an orange
1 1/2 cups fresh cranberries
Bake Puff Pastry Shells according to package directions. Let cool and then remove the tops and some of the center, being careful not to poke holes in the bottom of the shells. Set aside.
Make the filling. In the bowl of an electric mixer combine the cream cheese, butter and powdered sugar. Add in the Whole Cranberry Sauce and mix well. Set aside.
Make the topping. In a small saucepan over medium-high heat combine the cider, sugar, cinnamon stick and orange zest, stirring until sugar melts. Bring to a boil then reduce heat to low and simmer for 10 minutes then remove cinnamon stick. Pour in the fresh cranberries and brandy, if using, and cook for an additional 25 minutes or until most of the cranberries have popped, stirring occasionally. Remove from heat and let cool in refrigerator for 15 minutes.
To assemble the shells spoon filling carefully into shells, filling about 3/4's full. Put a generous tablespoon or two of the cranberry topping on top, covering the cream center and filling up the shell. Refrigerate until serving time. Serves 6.
