HEAVENS TO BETSY! That's all I SHOULD say...but, not being at a loss for words, allow me to expound just a bit...GLORY BE! FOR GOODNESS SAKES! FOR CRYING OUT LOUD! KICK THE DOG AND SLAP YOUR GRANNY...THIS IS 5-DANGS GOOD! If you're a diabetic, you can rename this delicious hot drink "The Kevorkian." You'll be out cold within an hour of imbibing...not that I would know. If you're NOT diabetic, and you drink this regularly, you will be. There, you've been warned. I've done my civic duty. I feel so much better now about sharing this recipe with you...think of this as a hot, liquid Mounds Bar...or tropical hot chocolate...it will give you island fever in short order, especially if you sip this in front of a blazing fire!
This is an award winning recipe - truly, it won Aubrey Shaner of Orem, UT $400! And I would have paid DOUBLE that amount...too bad Aubrey didn't know! For you non-Spanish speaking folks, tres leches means three milks...so it's THREE TIMES AS GOOD...it's my new favorite sleep-aide/hot cocoa...try it, it's lip-licking good!
Coconut Tres Leches Hot Chocolate - Adapted From Aubrey Shaner and Better Homes and Gardens Magazine
3 cups milk (Aubrey suggests using fat-free milk - please - that's like saying to add water! I used whole milk because that's all I buy - and in my mind, that's the ONLY milk there is!)
1 (14 oz.) can unsweetened coconut milk (usually found in the ethnic aisle of the grocery store)
1/2 of a can (14 oz.) sweetened condensed milk (about 2/3 cup)
2 tablespoons unsweetened cocoa powder
1/2 teaspoon vanilla
1/4 cup chocolate shavings - optional
sweetened whipped cream - optional
In a medium saucepan combine milk, coconut milk and sweetened condensed milk. Bring to a simmer over medium-low heat, stirring occasionally. Whisk in cocoa powder until well-combined. Remove from heat; stir in vanilla. Serve in mugs topped with whipped cream and chocolate shavings. Makes 5 (1 cup) servings.
