Mom and I dined on these - oohing and aahing with each bite...the boy turned his nose up, he doesn't like peaches. The girl turned her nose up, she doesn't like brie. The mister was out of luck as they were gone by the time he got home.
Warmed peaches, just enough so the sugars come out and make them sweeter than sweet...melted brie and just the tiniest bit of brown sugar...tortillas lightly browned in butter...love, pure and simple.
Peach and Brie Quesadillas ~ Adapted from Nancy VanNoy and Her Beautician
2 peaches, ripe, pealed, pitted, sliced thin
4 oz. brie cheese or Havarti or Fontina
2 tablespoons brown sugar
2 tablespoons butter
4 flour tortillas
Melt 1 tablespoon of butter in a large skillet over medium-low heat. On one tortilla arrange peach slices and top with half of the brie cheese. Sprinkle with 1 tablespoon of brown sugar. Top with second tortilla. Carefully place in skillet and cook until lightly browned, about 2 minutes. Using a large spatula and quick hands, flip tortilla to other side and cook until lightly browned, another 2 minutes or so. Remove from heat. Slice into 6 pieces. Repeat with remaining ingredients. Serves 4. These would be great for brunch or lunch, too...or an appetizer.
