Hurry and make this quick before you have to start your diet Monday morning...I'm certain I'm not the only one who does that! It's so good...so not-so-good for you...but really, on a sunny Sunday in Seattle, no one cared...even the mister ate this and as you know, he is religious about Sunday mornings...his food that is, and football, nothing else. He always eats the same thing...grits, eggs and bacon...but, with Baby Max underfoot, I got myself discombobulated and completely forgot about the Sunday routine...and everyone loved it. The mister was in quite rare form this morning...even though his Volunteers took a beating yesterday, his Huskies won, and BYU and Utah both took nose dives, which always makes him happy. This time of year the mood meter depends on football - who wins and who loses...please tell me it's the same at your house?
I know you all know how to make French toast so there's no need for a big recipe here...just spread one piece of your favorite day-old bread (I used French bread) on one side with cream cheese. Spread one piece of bread with your favorite jam...my new plum jam was mighty tasty! Put the two pieces of bread together, jam and cream cheese facing each other. Dip into an egg whipped with a fork (some of you might add milk to your egg, which is certainly fine with me!) ...coating both sides of bread. Melt butter in skillet, add dipped bread, cook on each side until golden brown. As my good friend Rachel would say...Yum-O!
Coating the French toast with syrup is optional but at this point, why not add a few more calories?!
