Once upon a time Ops, my good friend, was hungry and dispatched her aide to get her some lunch. The aide returned to Op's manse in Santa Barbara with what soon turned out to be Oprah's favorite sandwich in the WORLD. Ops thought it was so good that the very next day she again sent her aide to get her the very same sandwich...and then Oprah wanted to meet the lady who made it. She showed up at the little sandwich shop and discovered the shop was going to close down due to lack of business. Oprah, knowing a good thing when she tastes it, declared the sandwich to be too good to not be made ever again...and told the owner she couldn't shut down...then she set about helping the owner, Margaux Sky, to not only stay open but to expand her biz...Ops went on TV and talked about this sandwich and raved and raved. Margaux started making more and more sandwiches - and her business grew and grew. The End. Now, the moral of the story: If you get Oprah, you've got it made!
Oprah was right. This is one darn-fine sandwich. I'd give it 5 dangs on the Dang Meter for sure! This is the sandwich I go to when I want to impress...when I want something so good that left-overs are never an option...when I want a REAL sandwich with crunch and chew and delicious-fabulous-ness!
Watching the Blue Angels fly over Lake Washington while eating this sandwich was possibly the highlight of my summer...make this today - you will thank me - and Oprah!
Margaux's Curried Chicken Sandwich - Adapted Ever So Slightly From Margaux Sky, via Oprah
20 whole black peppercorns
2 bay leaves
2 whole cloves
1/2 lemon
3 pounds medium chicken tenders
1/2 cup plus 2 tablespoons spicy brown mustard
1/2 cup honey
1 1/4 teaspoons curry powder
3/4 teaspoon lemon pepper
1/8 teaspoon salt
Butter for spreading
1 loaf challah or other rich egg bread, cut into 12 thick slices (I used croissants - yummy!)
1/2 cup shredded carrots
1/2 cup slivered almonds
2 medium tomatoes , chopped
1 bag (about 5 ounces) salad greens
In a large bowl, combine mustard, honey, curry powder, lemon pepper and salt; stir in chicken. Cover and refrigerate at least 30 minutes, or up to 1 day.
Butter both sides of bread slices. In a heated nonstick skillet over medium-high flame, cook bread in batches 3 to 5 minutes or until browned, turning once. (If using croissants you can skip this part.)
Combine carrots and almonds with chicken mixture. Divide chicken curry among 6 bread slices. Top with tomatoes, salad greens and remaining bread slices. Makes 6 good size sandwiches.
