Sometimes my Morning Mocktail just doesn't cut it and I want something more...something good...something wonderful...so I make these biscuits. They only have 5 ingredients, are simple to make, but when slathered with Honey Butter they are magical! I offered up a plate of these to the boy before he headed out to work...he grabbed one and stuffed it in his biscuit hole, chewed maybe once, and stuffed in another. I stuck my hand in my mouth to stiffle the scream that was rising in my throat! I don't think he even had time to taste them...such a waste! These biscuits are not meant to be stuffed and inhaled! Oh NO! They are meant to be savored, bite by tiny bite...they are so GOOD, a real remedy for what ails you!
Knowing the "healing powers" of these biscuits, I took a plate to a friend, I'm certain they made her a bit better...at least momentarily! I took some more to another friend who told me she loves to toast day-old biscuits before she eats them...these biscuits have never lasted more than ONE day because they are eaten practically immediately...but, in the name of research, I managed to squirrel away the last 6 - out of sight from the boy - and the next day, I cut one open and put it in the toaster...what a TREAT! IF you can manage to make these and save a few for a day - try toasting them!
The recipe for honey butter is below - these biscuits are great with regular butter, of course, and with jam or jelly or even just plain...but honey butter is my fav.
Cream Biscuits with Honey Butter - Adapted from Baking Illustrated
2 cups all-purpose flour
2 teaspoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups heavy cream
Adjust the oven rack to the upper-middle position and heat the oven to 425 degrees. Line a rimmed baking sheet with parchment paper. Whisk together the flour, sugar, baking powder, and salt in a medium bowl. Add 1 1/4 cups of the cream and stir with a wooden spoon until the dough forms, about 30 seconds. Transfer the dough to the countertop, (add a bit of flour to the countertop to keep dough from sticking if necessary) leaving all dry, floury bits behind in the bowl. In 1 tablespoon increments, add up to 1/4 cup cream to the dry bits in the bowl, mixing with a wooden spoon after each addition, until moistened. Add these moistened bits to the rest of the dough and knead by hand just until smooth, about 30 seconds.
Shape the dough into a 3/4-inch-thick circle. Punch out the dough rounds with a cookie cutter. Push together the remaining pieces of dough, pat into a 3/4-inch-thick round and punch out several more dough rounds. Discard the remaining scraps. Place the biscuits on the parchment-lined baking sheet and bake until golden brown, about 15 minutes. Serve immediately.
Honey Butter - ME
1 stick butter, softened but not melted
1/4 cup honey
In small bowl combine butter and honey and mix with a wooden spoon until smooth - that's it! Slather this on Cream Biscuits or toast or anything else you can think of - even waffles!
