A friend's daughter is getting married next week and I'm lucky enough to be able to help - weddings are such a good time - well, if you're not the Mother of the Bride that is! Running around with friends gathering all the necessary things, eating lunch, spending someone else's money...all good...and when I told the mister that he commented that THAT is exactly what I do every day! As all monies that come into this blessed union are HIS, I am "spending someone else's money" when I shop....WHATEVER!! But I shant be throwing any bricks at the mister today...his beloved Oklahoma Sooners lost their championship game last night...and he even had on his red pajamas in true Sooner-solidarity. He is wearing black today...so sad...I hummed "Oklahoma" as he headed out the door...with reverence and respect, of course, I don't believe in kicking him when he's down ...so I'll give him a day or so to lick his wounds then it's GAME ON!
These delightful little treats are just that - delightful! And no baking! You do have to refrigerate them for about 2 hours or so until they are firm - and after you've made these and eaten them you'll know that the hardest part of this recipe is WAITING those 2 hours!
I fed these to some Foodie Friends the other day...who ate them with abandon...to heck with their diets! I must warn you - these are very addictive...crunchy peanut butter and vanilla wafers help make the crust irresistible - then there's the chocolate ganache on top - simple and seductive...you will have no will power after one bite.
No-Bake Chocolate Peanut Bars - Adapted From Southern Living Magazine - Sherri Mitchell, Hoover, AL
1 cup butter, softened
1 cup crunchy peanut butter
2 1/2 cups powdered sugar
1 1/2 cups vanilla wafers, crushed (about 45 cookies)
1 (12 oz.) package semi-sweet chocolate morsels
1/2 cup whipping cream
Beat butter and peanut butter at medium speed with an electric mixer until blended. Add powdered sugar and vanilla wafer crumbs; beat until blended. Press mixture evenly into a lightly greased 13x9-inch baking pan lined with wax paper. Stir together chocolate morsels and whipping cream in a medium saucepan over low heat until melted and smooth. Spread evenly on top of peanut butter mixture. Chill 2 hours or until firm. Remove from refrigerator, and let stand at room temperature for 10 minutes before cutting into bars. Makes about 36 bars. (I trimmed off the sides and ends, making all my bars the same size...which left the ends and sides for me...kidding Mom...you KNOW I don't imbibe!)
