Doctors are good for a lot of things...they prescribe drugs - always good...and they listen, of course, who wouldn't for $250 an hour! And they have great magazines in their waiting rooms...which is where I got the idea for this...Sunset Magazine I believe, I could be wrong because I was in so much pain while I was waiting that I couldn't really focus - but the pictures looked good! Without giving you all the gorrrrry details...I got a cortizone injection in my right shoulder and it seems to have worked - I have had some relief and really, as long as I don't use my right arm I'm fine!
We love pizza - and we do our best to eat our weight in pizza every year - but this is different. One nice size slice and the mister and boy were satisfied...the crust is crispy on the outside and thick and chewy on the inside - good enough to eat just by itself...but covered with olives, zucchini, mushrooms, artichoke hearts, scallions, fresh basil and tomatoes - and then topped with grilled chicken and you've got a meal and then some! The mister likes Kraft Zesty Italian Dressing so that's what I used - but any salad dressing will work - and any topping - and you can eat this with a fork or pick it up, fold it in half and eat it like any good Italian would!
Insalata Pizza - Pots and Pins
1 pizza crust - store bought or homemade - see below for recipe
1 can (10 oz.) artichokes
1 can (4 oz.) sliced olives
1 small scallion, thinly sliced
2 cups mixed greens, rinsed and dried
1/2 cup sliced mushrooms
2 Roma tomatoes, thinly sliced
1/2 cup fresh basil, thinly sliced
1 cup shredded Parmesan
1 small zucchini, diced
2 chicken breasts, marinated, grilled and cut into bite-sized pieces

Pizza Dough Recipe - click here. Make according to directions, this pizza dough recipe will make two crusts, use one for this recipe and save one for another pizza or freeze, it will keep for one month.) Drizzle some of the dressing over the top of the pizza crust before adding the salad ingredients.
While pizza dough is baking, marinate two chicken breasts in 1 cup of the Italian salad dressing for at least 2 hours. In a large frying pan, heat two tablespoons of olive oil and add chicken. Cook chicken until it it browned on both sides, and then place the entire pan in the oven at 350 degrees for 20 minutes to finish baking while you assemble the pizza. When chicken is done, cut into bite-sized pieces. Set aside to cool.
You can layer the ingredients on top of the crust, as I did, or you can put all of the salad ingredients into a big bowl and toss well to combine. Add as much salad dressing as you like, then pour salad out on top of crust. Top with grilled chicken and remaining cheese. Cut into large slices and serve. Serves 6.
