Did you know that Utah is the world's largest consumer of Jello? Green Jello inparticular. Strange, no? I eat Jello once a year - on Thanksgiving - and it's always my mom's version. Even though I grew up in Utah, I did not come from a family of Jello-eaters - something I've always been quite proud of. And then I married the mister and discovered that not only is he a Jello-eater, he considers it a dessert! Yes, sick and wrong but there you have it.
While I was there for T-day, my mom and I made a late night run to the grocery store to purchase raspberry Jello for our feast - she always makes her special version but with everything else we were making it kind of slipped our minds. So we found ourselves in the Jello aisle searching the shelves for raspberry Jello...and there was none to be found! It looked like a pack of raspberry-Jello-loving wolves had descended on the shelves...plenty of strawberry Jello, tons of orange and even lime...but no raspberry! Then we spied a few boxes of sugar-free raspberry Jello...which we quickly grabbed before some hell-bent-on-having-raspberry-Jello-fiend showed up to snatch it out from under us! Next stop was the frozen fruit aisle...and lo and behold...NO frozen raspberries either! In all of her Thanksgiving making years, my mom has never had to use sugar-free Jello and mixed berries before! In the Thanksgiving raspberry Jello world, this is like serving a cornish game hen instead of a turkey!
We made the best out of a bad situation...and much to our surprise, it all worked and was as good as it always is! It's a staple on our Thanksgiving table and it's a crowd pleaser...and wouldn't you know, the mister was the only one who ate this as his dessert, passing up the 5 REAL desserts! Whether you eat it with dinner or for dessert...you'll like it...guarandamteed!
Mom's Raspberry Jello - Pots and Pins
1 box (6 oz.) Raspberry Jello (sugar-free or not)
2 cups frozen raspberries (or mixed berries) semi-thawed
1 can (8 oz.) crushed pineapple, well drained
1 cup sour cream
1 cup cream cheese, softened
Make Jello according to package directions. Stir in the semi-thawed raspberries and the crushed pineapple. Pour half of this mixture into a serving dish and put into fridge for at least two hours. Leave remaining Jello mixture on countertop. Make the filling for the Jello by mixing the sour cream and cream cheese in the bowl of an electric mixer until well blended. Set aside. When the Jello in the fridge has set, remove and carefully spread the cream cheese mixture over the top. Pour the remaining Jello mixture over the top and return to fridge for another 2 to 3 hours.
