My good friend Lori has the best recipes - most of them are from her family cookbook, which she keeps underwraps...oh I've seen it, she even let me borrow it but I dare say she would have had me strung up on meat hooks if I had tried to steal it! The thought did occur to me - it would have been worth the pain and suffering I would have had to endure too...it's full of wonderful tried and true recipes, all attributed to different relatives. I don't have a family cookbook per se...I have some family recipes but I did not come from a family of great cooks...good, yes, but great? Well, I'd answer that in more detail but I don't want to be cut out of the will. So when I called Lori and asked her for a popcorn recipe she rattled off about three of them - all from her family cookbook.
This recipe couldn't be more simple...and it's SO GOOD!!! Lori made this for her kids and it was also something she had growing up...as I told you in a previous post, my people were not Jello people, so I did not grow up eating Jello-Popcorn Balls but I now realize how deprived I was! I only had strawberry Jello on hand but just imagine a big plate of red and green popcorn balls for Christmas! Lime Jello and Cherry Jello Popcorn balls...I know it sounds weird, Jello and popcorn together but trust me, these are different, delicious and you AND your kids will love 'em!
Jello-Popcorn Balls - From Lori Johnson
1/2 cup sugar
1 cup light Karo syrup
1 small package Jello, any flavor
2 bags microwave popcorn
Make popcorn according to package directions and pour out into a 9x13-inch baking dish. Mix sugar, Karo syrup and jello in a small saucepan until sugar dissolves. Stirring constantly, bring to a rolling boil. Remove from heat and pour over popcorn. Using a wooden spoon coated with butter, stir popcorn to mix. Let cool slightly, (popcorn will stick together as it cools) then coat your hands with butter and shape into balls. Makes 12 large popcorn balls.
