I have come to believe the mister to be semi-bulimic. My understanding of someone who suffers from this ailment is they binge on food until they are sick and then they throw up...so far, the mister only binges one day a week, but how soon before it becomes a daily thing?!? Monday thru Friday he is "Mister Health," unless he goes a few rounds with his good friend Jack...he walks 2 miles every day and tries to eat a normal-sized portion of food...but come Saturday, he's a gluttonous beast! His binges seemed to be brought on by televised college football games...it's really quite sad. Usually, after one of these day-long-episodes, he'll passify himself with Rolaids washed down with a little Pepto-Bismol which is followed by a sleepless night for both of us! In the morning he'll tell me not to make him a big breakfast...something simple he'll say...because he's "trying to cut back."
Toad in the Hole...that's the British name for it...although I've heard it called Bird in the Bush or Snake in the Grass or Goose in the Gander...whatever you call it...it's simple...and if I ate eggs I would tell you it's good, but I can only tell you that the mister loves this for breakfast.
Toad in the Hole
2 tablespoons butter
1 slice bread
1 egg
Heat a heavy skillet over medium heat, melt butter. Cut hole in middle of bread with a cookie cutter. Place bread in skillet, crack egg into the hole in the bread. Cook until bread begins to brown, flip toast and egg and cook the other side until desired doneness of egg. Serve immediately.
