My mom has made this salad for years and my kids love it...the girl picks out the shrimp and the boy picks out the celery but other than that it's a slam dunk. When I've made this salad for my family I've tried adding other ingredients to spice it up a bit - cherry tomatoes, sour cream, red bell peppers, etc., etc., but any attempts to change this salad have been met with nasty comments and threats of a revolt...so now I don't dare add anything...
For every barbecue, holiday, birthday we have this salad...it's the boy's favorite food and he could eat the entire bowl by himself if we let him. He once tried, but that only resulted in an extended stay in the bathroom, fortunately he learned his lesson.
Shrimp and Macaroni Salad by Carol Wagner
1 14 oz. package elbow macaroni
1/2 of an English cucumber, quartered, peel left on
4 stalks celery, thinly sliced
4 green onions, thinly sliced, including greens
1 1/2 to 2 cups mayonnaise
salt and pepper to taste
1/2 pound medium or small shrimp, cooked & rinsed
Cook macaroni according to package directions. Rinse with cold water until macaroni is cool to the touch. Pour macaroni into a large bowl. Add cucumber, celery, green onion, shrimp and 1 1/2 cups of the mayonnaise. Mix well. If you want a creamier salad add the remaining mayonnaise. (If the macaroni is not cool it with need more mayonnaise.) Season with salt and pepper to taste. Refrigerate until serving time. Serve cold. Serves 10.
