It doesn't look like much here - but trust me - 250 mini-cupcakes will BREED if left by themselves - so by the time you've filled and frosted say 25 of them, you'll have 275 left to do!
Fortunately I had the help of two wonderful friends today - Kareena and Janice - who acted like it was nothing to spend their day off licking chocolate from their fingers and "testing," in the name of "quality" a dozen or so cupcakes - and they even helped with the dishes!
I made batch after batch of frosting - using 5 pounds of butter and 8 pounds of powdered sugar! Lemon cupcakes filled with a creamy lemon curd filling and frosted with lemon buttercream...chocolate cupcakes filled with milk chocolate cream and frosted with vanilla buttercream...vanilla cupcakes filled with strawberry cream and frosted with vanilla buttercream...and carrot cake cupcakes - without a filling because they just didn't need one!
But as you know, not having an oven made the baking of these beauts impossible - so with the help of MORE WONDERFUL WOMEN - they got done...So THANK YOU TO Barbara, Megan, Lori, Nancy and Whitney who baked this morning and saved my bacon!! I owe you all....so name your price...anything you want - the sky is the limit! And as my dad likes to say, I'll owe it to you rather than cheat you out of it! Kidding!
Five different ovens produced many different sizes of cupcakes - but once they were frosted and "sugared" they all looked great....They are now safely at the home of the new bride and groom for their open house tonight and I can finally put my feet up....
