Last week I read about Todd and Diane's Baked Sweet Onion Dip (www.whiteonricecouple.com) - it sounded so good that I couldn't get it out of my mind. When I got home it was one of the first things I wanted to make...so I looked up the recipe again, and you can get it by clicking here and then I saw that it contained mayonnaise. Well, the mister has a problem with baked mayo....so I made a few changes to their recipe and while I know it's probably not as good as theirs, it's pretty dang good all the same - and easy, too.
Sweet Onion Dip - Adapted from Todd and Diane's Sweet Baked Onion Dip
2 medium sweet onions, finely chopped (I used Walla Walla's, they are the best!)
2 tablespoons butter
1 package (8 oz.) cream cheese, softened
1/2 cup freshly grated Parmesan cheese
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
In a large skillet melt butter, add onions and cook over medium high heat until onions are translucent, soft and beginning to brown, about 8 to 10 minutes. Stir in garlic and cook for an additional minute. Remove from heat. In large bowl combine softened cream cheese, grated Parmesan, salt and pepper, mix well. Add onions and mix well again. Pour into serving dish. Serve warm with crackers, toast or focaccia. Reheat in microwave. Serves 8.
