I must confess, I bought a package of Sweet Potatoe (spelled this way in case Dan Quayle is reading along...) Fries at Costco - already peeled and cut into perfect slices...so I'm feeling a little Sandra Lee-ish...but I promise - no tablescapes will be shown in this post! These fries just looked so good and fresh - I threw them in the basket before I could talk myself sane - I mean, who needs a giant bag of sweet potatoes fries?! I suppose we'll be eating these fries for the next however many weeks until they're gone - at least they're good for us. The coating for these fries was on the package itself - this is basically a "cheater" recipe...but it's good so that cancels out the fact that I bought the fries and the recipe! Speaking of Sandra Lee...have you ever made one of her recipes and had it turn out? And in case your wondering, my kitchen valances did not match, at any time during the making of these fries, any article of clothing that I was wearing - including my earrings...nor did my mocktail!
I made more than we could eat at one sitting - so I bagged up the remainders in a Zip-loc bag and put them in the refrigerator - they have been great for snacking! If you don't have a Costco warehouse store near you, you can use regular sweet potatoes - it's just more work!
Roasted Sweet Potato Fries - from Costco Wholesale Foods
3 cups sweet potatoes, peeled and cut into fries
1/2 teaspoon red pepper flakes
1 teaspoon chili powder
1 teaspoon salt
2 tablespoons olive oil
1 tablespoon lime juice
1 tablespoon spicy brown mustard
1 clove garlic, minced
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
Cooking spray
Preheat oven to 400 degrees. Put all ingredients, except sweet potato fries, into a large bowl. Whisk together until combined. Toss in sweet potatoes and continue to toss until they are evenly coated. Spray a rimmed baking sheet with cooking spray. Evenly spread sweet potato fries on baking sheet. Bake in 400 degree oven for 20 minutes, turning half-way through for even browning. After 20 minutes check for crispiness - if you want them crispier, leave in for another 2 or 3 minutes, but watch closely so they don't burn.
