The mister announced to the neighborhood that we will have a horrendous water bill this summer...we were out on our driveway and I was the only one standing near him but he was speaking so loudly I'm sure it registered on the Richter! Why he feels the need to do this is a mystery..."WE WILL WATER ONCE A WEEK AND THAT'S IT!" JaVolMeinCommandant! But by water do you mean what comes out of the hose or do you mean the rain that falls on a daily basis??? The mister is turning into something of an Aqua Man...I might just make him a cape and shirt that says that...Aqua Man To The Rescue! He is on the warpath about the water bill but we don't water the lawn...we live in Seattle and Mother Nature does that for us! I'm just documenting "events"...for future reference...I'm told having a written history of lunacy will come in handy, not if but when, the mister slides off the slippery slope he's on!
As promised, this is the 2nd appetizer in a week-long appetizer extravaganza! This is one that I'm sure you're thinking, been there/tomato/done that/basil...but hold the Droid...this has a last minute twist that is a sure crowd pleaser...a tantalizing piece of Italian Salami tops off the stuffed tomatoes...it's the reason the Mona Lisa smiles!
Cherry Tomatoes Stuffed with Basil Cream Cheese and Salami - Pots and Pins
20 Cherry Tomatoes
1/4 cup cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon, packed, fresh basil, chopped
5 (3-inch round) slices Italian Dry Salami, quartered
Wash and dry tomatoes and cut a sliver off the top, just enough to allow you to put a small knife in so you can hollow it out; be careful not to cut all the way through. Turn tomatoes upside down to drain on paper toweling. In a small bowl combine cream cheese, salt, pepper and basil. Mix well then scoop mixture into a Zip-lock style bag. Snip off the end about 1/2-inch from corner. Squeeze mixture gently into hollowed-out tomatoes, allowing to come up just a bit on top. Take a piece of salami, roll into a tube and insert into the cream cheese in each tomato. Makes 20 appetizers.
